Sausage & Potato Breakfast Skillet

Home fried potatoes, sausage, onion, and green pepper make up this hearty all-in-one skillet breakfast.

Ingredients

• 1/2 lb. Roll Sausage, such as Bob Evans
• 2-3 potatos
• 1 bell pepper, chopped
• 1 onion, chopped
• 6 large eggs or egg substitute (pre-beaten eggs in carton are great for camping)

Directions

Step 1: Crumble sausage into frying pan. Add potatoes, pepper and onion. Cook slowly until sausage is browned.

Step 2: Beat eggs. Add to sausage mixture and cook, stirring occasionally to fluff eggs, until eggs have thickened
